Professional bar of a legendary brewery on two floors

A very old Parisian house reinvented into a unique two-story venue. Since its origin in 1905, the establishment has undergone a complete renovation while retaining its period decoration. It is a place where traditional brasserie dishes are served.

Over two floors, the ground floor gives prominence to the brasserie space, while the upper floor is more intimate, ideal for cocktail tasting.


Both bars have been completely redesigned. The positioning has been modified, a few old furniture elements have been kept, and Bar Circus elements have found their place there.


On the ground floor, the professional bar of the brasserie has been built at an angle. It features a coffee machine, a beer column, a filtered water column with still and sparkling water, a sink, refrigerated units with under-counter displays, and a cash register to be shared with the dining area.


Upstairs, there's a 2.5-meter-long cocktail bar. It includes the cash register, a sink station with a shaker rinser to be shared with the cocktail station. At the end, there is a filtered water dispenser for still and sparkling water, and in the back bar, there are various fridges, including a freezer. The bartender facing the cocktail station, therefore, has access to all points, and a service in the dining area allows for serving and payments without disturbing the bartender.


These are thus two professional bar stations that fully meet the expectations of brasserie operations, with the cocktail bar upstairs for a more intimate ambiance.
